A Simple Stir Fry

Have onions, green peppers, garlic and  basil? Great.

What about some eggs and leftover rice? Now we’re in business.

If you’re like me, you’re always trying to make quick meals at home in between running around to work, school other activities.

This is a really easy 8 ingredient dish  that you can put together in no time at all.

Ingredients

1 tablespoon olive oil

1 green pepper, diced

1 onion, diced

2-3 cloves of garlic, diced

3 large eggs (I used just egg whites)

2 cups of cooked rice (this is 2 cups after cooking- not before, trust me that would be a lot of rice!)- you can use brown or white rice

5-6 fresh basil leaves (or to taste), chopped

salt & pepper to taste

Method

Heat the olive oil in a skillet.

Add the peppers, onions and garlic. Saute for a few minutes.

Break the eggs,  putting all the egg whites into a bowl.

Add the egg whites to the skillet with the onions, etc.

Once the egg whites settle a bit, stir everything together like you are making scrambled eggs.

Once the eggs are cooked, add the cooked rice. Stir.

Add the basil leaves, salt and pepper to taste.
