Alright everyone, quiz time…

What does Olive Oil + Garlic + Lentils +  Vegetables + Spices = ?

Great job!  It is choice  “d- All of the above.”

Lentils and all bean products are very important suppliers of protein in  the vegetarian diet.  This is our go to lentil soup when we need something easy, tasty and full of nutrients. It’s also very simple to modify the taste by just changing a few spices.

Italian= garlic, paprika, oregano

Moroccan= garlic, cumin, cinnamon, paprika, cilantro

Indian= ginger, garlic, cumin, coriander, cayenne, cilantro

Whatever you feel like works.

I cook it in my favorite red, very heavy Le Creuset dutch oven. It also works well in a slow cooker if you want to have it waiting for you when you come come from work. I have even made it successfully in a pressure cooker when in a hurry.  It’s versatile.

Ingredients

2 Tablespoons Olive OIl

3 Cloves of Garlic, finely chopped

5-6 Baby Carrots  (a handful really), cut into disks

1 Medium Potato (leave skins on if it is a thin skinned variety like red, yellow, etc- not russet or baking)

I Large Tomato, diced

1/4 cup Tomato Paste

1/4 cup French Green Lentils

1/4 cup Yellow Split Peas

1/4 Cup Green Split Peas

2 Tablespoons Barley

1 Teaspoon Paprika

1 Teaspoon Oregano

1 Teaspon Salt

1 Teaspoon Black Pepper

Directions

Heat the olive oil in your deep soup pot.  Keep the heat not more than a medium setting.

Add the chopped garlic cloves.

When they start to sizzle, add the diced tomatoes.

Let the tomatoes break down for a few minutes in the heat.

Add the carrots and tomato paste.

Rinse the lentils quickly in water, drain and add to the soup pot.

Add 5 cups of water.

Mix in the paprika and oregano.

When the soup starts to boil, change the temperature to low, cover the pot and let it cook for about 45 minutes.

Be sure to check on the soup a couple of times in the 45 minutes.

After the lentils are almost done cooking (ie after 45 minutes), add the salt and pepper.

Close the pot and let it cook for another 15-20 minutes.

Adjust any seasonings.  Serve.
